			Chicken
- 1 cup chicken breast, cubed, seasoned with salt and pepper
Vegetables
- 1 cup zucchini, cubed
- 1 cup squash, cubed
- 1 cup carrot, sliced
Sauce
- 4 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tsp rice vinegar
- 1 tsp garlic, minced
- ½ tsp ground ginger
- Brown sugar, optional (to taste)
Garnish
- 2 tbsp sesame seeds
Instructions
- Prepare the sauce: In a bowl, mix together the soy sauce, sesame oil, rice vinegar, minced garlic, ground ginger, and brown sugar (if using) until well combined.
- Coat chicken and vegetables: Add the cubed chicken breast, zucchini, squash, and carrots to a large bowl. Pour the prepared sauce over the ingredients and toss until everything is thoroughly coated.
- Arrange in air fryer: Place the coated chicken and vegetables in a single layer in the air fryer basket. Ensure not to overcrowd or stack the ingredients for even cooking.
- Air fry: Cook at 380°F (193°C) for 15-20 minutes. Pause every 5 minutes to shake the basket or stir the contents for even cooking and browning.
- Finish and serve: When the chicken and vegetables are cooked through and slightly browned, remove them from the air fryer. Sprinkle with sesame seeds and serve immediately, optionally over rice or cauliflower rice.
Notes
- For extra sweetness, adjust brown sugar to taste or omit for a savory version.
- Cut vegetables uniformly to ensure even cooking.
- Do not overcrowd the air fryer basket to achieve proper crisping.
- Shake or stir the basket every 5 minutes to prevent burning and ensure even cooking.
- Serve with steamed rice or cauliflower rice for a complete meal.
