- 2 cups cooked chicken, shredded (rotisserie chicken works great)
- 1/2 cup buffalo sauce (store-bought or homemade)
- 1/4 cup ranch dressing or blue cheese dressing (depending on preference)
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded carrots (optional for crunch)

- 10-12 egg roll wrappers
- Olive oil spray or cooking spray
Instructions
- Prepare the Filling: In a large bowl, combine the shredded chicken, buffalo sauce, ranch or blue cheese dressing, and mozzarella cheese. Add the shredded carrots if using. Mix well until everything is evenly coated.
- Assemble the Egg Rolls: Lay an egg roll wrapper on a flat surface, with a corner facing you like a diamond shape.
- Add Filling: Place 2-3 tablespoons of the buffalo chicken filling in the center of the wrapper.
- Roll the Egg Rolls: Fold the sides of the wrapper over the filling, then roll the egg roll tightly from the bottom to the top. Wet the top corner with a bit of water to seal it.
- Repeat Assembly: Repeat with the remaining wrappers and filling.
- Preheat Air Fryer: Preheat the air fryer to 375°F (190°C) for about 3 minutes.
- Prepare Basket: Lightly spray the air fryer basket with olive oil spray to prevent sticking.
- Arrange Egg Rolls: Arrange the egg rolls in a single layer in the air fryer basket. Spray the top of the egg rolls with a light coat of olive oil spray.
- Air Fry: Air fry at 375°F (190°C) for 8-10 minutes, flipping halfway through, until the egg rolls are golden brown and crispy.
- Serve: Once the egg rolls are done, remove them from the air fryer and serve immediately.
- Dipping Sauces: Serve with extra buffalo sauce, ranch dressing, or blue cheese dressing for dipping.
