Tutorial: Buttercream Piping Technique Plus A Gumpaste Rose

crumb coat cakeMake sure your cake is crumb free like the one pictured above!  See my tutorial for icing your cake as well as my tutorial for getting the perfectly smooth and flawless frosting before you begin to decorate.

Using your icing bag fitted with a round tip (#12), pipe a vertical row of dots on your cake.  Take the edge of your spatula and gently drag the icing horizontally for each dot.  Continue pattern around the cake.

Top your beautiful cake off with a handmade gumpaste rose!  It only takes about 10 minutes to make this fabulous rose and you can learn how to do-it-yourself by visiting my tutorial!  I added a bit of sparkle to it with luster dust.  Try adding fresh flowers to give it a new twist.

    It’s a bit tricky! I found the best way to do it is to do as much as you can with a spatula and then use a toothpick to smooth the icing under the first row of dots. When all else fails, use that as the back of the cake :)

    Hi Dan! Next time I make one of these cakes I will post a picture of how to finish off the last row. Usually, I pull the last row of dots with the spatula, as close as I can to the first row where I started. Then I use a toothpick to kind of tuck them under the other dots. It seems to work pretty well.

    You can do it! It just takes a bit of practice and patience. It took me several attempts back when I was learning.

    I literally use a small level from the hardware store as I cut the crown of the cake off! Works like a charm. Slice a little off the top of your cake with a serrated knife and then check to see if it is level.
