A Basketweave Wedding Cake

This cake is decorated with buttercream using the basketweave technique and then roses were placed to add some color. Tip: always make sure your flowers are fresh and pesticide free before placing them on a cake!

How did you get it to look so smooth? Buttercream? Water? My fondant doesn’t look as smooth as yours! Any help would be appreciated.

Hi Helen! For the basketweave wedding cake, I actually used buttercream with a tip #47. I found that the trick for smooth buttercream for the basketweave technique is to first make a medium-thin consistency for icing instead of a medium. For smooth fondant – first you’ll need a good brand such as Satin Ice. Then you really need to knead it to a playdough like consistency. Sometimes I even throw mine in the microwave for 30 seconds or so before I roll it out.
