		<description>Hi Helen!  For the basketweave wedding cake, I actually used buttercream with a tip #47.  I found that the trick for smooth buttercream for the basketweave technique is to first make a medium-thin consistency for icing instead of a medium. For smooth fondant - first you&#039;ll need a good brand such as Satin Ice.  Then you really need to knead it to a playdough like consistency.  Sometimes I even throw mine in the microwave for 30 seconds or so before I roll it out.
